Roasted Cauliflower with Smokey Poblano Peppers

Fall side dishes can be incredibly calorie packed; moments of truth for those trying to continue their healthy eating plan through the winter months. Try making a dish with roasted cauliflower and smoky poblano peppers. This recipe is quick and delicious, and not to mention, a healthy alternative.



Preheat oven to 400° F.


In your Pujols Kitchen Glass Casserole Dish, combine all the ingredients.


Spread evenly in the dish and place in the oven.


After about 10 minutes, stir, and continue roasting an additional 5-10 min.


Check for doneness and adjust salt and pepper before serving. Serve hot as a vegetarian side, or along with turkey as a deliciously healthy fall alternative side dish.




1 head of cauliflower, cut into equal size pieces


½ poblano pepper, sliced


½ tablespoon of garlic, chopped


1 tablespoon of olive oil


Salt and pepper to taste
