Pan Roasted Radish and Zucchini Side Dish
Chef Adi has a delicious and healthy side dish today! #Radishes are high in nutrients and low in fat. When cooked correctly they are a delicious and nutritious addition to any meal.
Preheat oven to 400°F
Cut the stems off of the radishes and rinse thoroughly. Cut the radishes in half.
Using a Large Pujols Kitchen Sauté pan, heat two tablespoons of olive oil. Add the radishes, and sauté for about 1 minute. Add salt and pepper and place the pan in the oven for about 15 minutes, until the radishes are slightly golden around the edges.
Remove the pan from oven carefully and place it back on the stove. Over medium heat add the garlic, zucchini, and 1 tablespoon of water. Sauté for about 3 minutes, until zucchini is fork tender. Season with additional salt and pepper and a dash of cumin before serving.
This is best served as a side dish with chicken or fish. But it’s so versatile it can also be paired with beef. Use stock or soy sauce instead of water to add a different flavor profile. Just be aware of the salt you’re adding when using different types of liquids.

2 zucchini, sliced

Dash of cumin
