Sopa de Pollo (Homemade Chicken Soup)

Sopa de Pollo is a tasty and easy-to-make soup that can be served for lunch or dinner.



Salt and pepper the whole chicken.


Add 2 tablespoons of olive oil to the Pujols Kitchen Large Caldero over medium heat.


Put the whole chicken into the hot oil. Pan sear the chicken on each side for 5 minutes. Then fill the Caldero with water until the chicken is almost covered.


Add the onion, carrots, garlic, celery, and oregano. Boil the chicken for about an hour, or until it is tender.


Remove the chicken from the Caldero onto a cutting board. Carefully pull the chicken off the bone and add back into the Caldero.


Then add the corn, dry spaghetti, Taro root, and 2 bouillon cubes.


Stir and let cook for another 10-15 minutes, or until the Taro root is tender and the spaghetti noodles are done.


*Note: Add additional salt and pepper to taste.




1 whole chicken

5 cloves of garlic


2 tablespoons of olive oil


1 large yellow onion (chopped)


5 carrots (chopped)


½ stalk of celery (chopped)


2 tablespoons of dry oregano


5 medium-sized Taro roots, or 5 small potatoes


8 ounces of dry spaghetti noodles


1 (16 ounce) bag of frozen sweet kernel corn


2 Knorr chicken flavor bouillon cubes


1 tablespoon of fresh parsley (chopped)
